Stir Fried Greens (Chai Qing)

The leaves are small, curved, and light green in appearance, which indicates a well-made tea. Because of the higher side of firing, the tea tends to have a lingering toasty note. The flavor of the liquor is clean and sweet, with a slight vegetal aroma. This small-leaf Mao Feng varietal is picked early during harvest. Produced on smaller farms within the Fujian Province and for this reason, the tea is virtually unknown outside of the country.

TIDBIT: Anyone that enjoys great Chinese tea has noticed that the best tea comes out of the Fujian Province. What makes Fujian Province so special? Climate and location. Fujian province is located on the southeast coast of China on the Taiwan Straight. With the subtropical climate and mountainous terrain, the conditions for growing tea are ideal. Farmers in the mountains of the province have been growing tea in the region since the Eastern Jin Dynasty (317 – 419 CE).

Several different fruits are grown within the province as well, such as longan, lichee, bananas, and pineapples. Fujian is also known for growing olives, bamboo shoots, sweet potatoes and mushrooms.
