Infused Honey

Honey is natures way of adding a little bit of sweetness to our day. Honey is not only delicious in food, but also has antibacterial properties. For example, if you burn yourself a little bit of raw honey makes for an excellent natural poultice. Once raw honey hits your skin, it becomes hydrogen peroxide. Pretty cool. If you have a sore throat and a cough, not only will honey help out as an antibacterial, but it will also coat the throat and stop the coughing, allowing for some much-needed recoup time to allow the throat to heal.

Now if you would like to spice up your honey with some flavor, then look no further than a nice infusion. It’s really quite easy to do. You can either jump start the infusion with some light heat, or just go straight to the mason jar. If you’re going to use heat, make sure the temperature is low. You want to keep the honey raw. I would keep the heat around 95 degrees. Place the honey and the herb, spice or dried fruit in the pot at the same time. I would let it heat for 2-3 hours. I feel this will help to open and soften up the adjunct in order to speed up the infusion. At the end of this period, you can pour the contents into the mason jar. The honey is not going to be very hot, so I wouldn’t worry about the glass cracking. It will also be easier to pour all of the contents into the jar, instead of having to scoop, scoop, scoop.

As far as the cold method. I would pour the adjunct into the bottom of the jar and fill it up with honey. Make sure that the adjunct is covered, and flip-flop the jar once every day for an even infusion. This goes for the hot method as well. Allow to infuse for 2-3 weeks, depending on the method.

At Tin Roof, we add Cinnamon, Lavender, Chocolate, Vanilla Bean, Hibiscus, Carolina Reaper, Ghost Pepper, Carolina Smokehouse Glaze just to name a few. We try to have them all out at the same time. Being that it takes 3 weeks to complete there are times that we are out of specific ones.
